Fresh Tomato Lime Salsa Recipe

The first long weekend of the summer is just around the corner. No matter what the weather brings, sit back, relax and unwind with this simple and delicious snack. Prep time for this treat is quick and easy, so bring it to a party and impress your friends.

Fresh Tomato Lime Salsa

Yield: 4 cups

Prep Time: 15 minutes

Ingredients:
3 cups tomatoes, diced
1 tbsp shallots, minced
1 clove garlic, minced
1 cup corn, whole kernels
2 limes, zested and juiced
3 tsp cilantro, chopped
2 tbsp olive oil
1 tsp sugar
1 tsp chili powder
1 tsp salt
½ tsp pepper

Method:
Place all ingredients in a bowl. Mix well. Allow salsa to sit for one hour before serving. Serve this salsa with your favourite tortilla chips, crackers or pita chips.

Chef’s Notes:
• Red onion can be substituted if shallots are not available.
• For those who do not like cilantro, substitute 1 tsp ground coriander.
• This salsa will keep in your refrigerator, covered, for up to three days.
